Marsannay를 대표하는 생산자 중 하나로, 3대째인 Bernard Bouvier가 이끌어가고 있습니다. Echezeaux, Charmes-Chambertin Grand Cru를 포함해 Cote de Nuits 전역에 약 30ha의 밭을 소유하고 있습니다. 평균 수령은 50년으로, 최대 90년 수령의 올드 바인 플랏을 소유하고 있기도 합니다. 양조 시 줄기는 평균적으로 약 50% 가량 사용하며, 스틸 탱크에서 발효됩니다. 숙성은 12~18개월 동안 배럴에서 이루어지며, 뉴오크는 15~30% 비율로 사용된다고 합니다. 최근 콘크리트 에그, 큰 사이즈의 배럴등 새로운 시도를 이어가고 있으며, SO2 첨가도 점차 줄여가며 순수함, 섬세함, 깊이감이 강조되는 와인들을 양조하고 있습니다.
